Bring a dish to share following this month’s theme of Recipe from a Fiction Book. Don’t forget to bring your recipe to share with the group. Tasty Reads 20 large mushrooms 5 oz. container of Boursin cheese (preferably a kind that comes mixed with herbs) ¼ cup Italian-style bread crumbs ⅛ tsp. salt Salted butter Preheat oven to 350° and move oven rack to the middle position. Line a baking sheet with parchment paper. Gently wash and dry your mushrooms. If your mushrooms have stems remove them by twisting and pulling them from the cap. You will not need the stems for this recipe. Place your mushrooms on your baking sheet. Heat the Boursin cheese in a microwave safe bowl for 30 seconds on high. Stir in the salt. Let the cheese rest in the microwave for another 30 seconds. Remove the bowl from the microwave and stir the cheese with a fork. Little by little add the bread crumbs to the cheese, mixing as you go. Wipe the outside of the mushroom caps with softened, salted butter. Fill the cavity of the mushroom with cheese mixture. Bake for 15 minutes. Remove from oven and let cool for 10-15 minutes before serving. Looking for some literary inspiration for your Thanksgiving table or your next Lunch Bunch meeting?
